YES, we have our own log-grown mushrooms! We cut down the trees, plugged each log with spawn, and sealed with organic beeswax. Over the following 18 months, the logs sat in their own ideal area seemingly doing nothing, but all the while they were being invisibly overtaken from the inside out.
These particular shiitakes were grown on hardwood sweet gum and maple logs under natural shading (a sweet gum and pine tree canopy). Hand-picked, cleaned, inspected, some of them julienned or chopped, and air-dried (no heat) then packaged for storage in airtight food grade bags.
We do not use sawdust and we do not shock or force them to fruit.
